When you are short on time and in need of a hearty meal, tortillas come to the rescue again.

Beat the eggs, add salt, and spices and pour onto a heated pan (28 cm), lightly greased with oil.
Place a tortilla on top and press gently. Bake at a very low temperature.
Grate the cheese, cut the dill and the scallions, cut the cherry tomatoes in half.
Place the skimmed-milk curd in a bowl, mash it, add the grated cheese, dill, a little garlic, salt and pepper and mix everything together.
When the omelette has browned in the pan, carefully turn it over with a wide spatula.
Sprinkle half of the grated cheese mixed with curd, dill, spices over the top. Place and gently press a second tortilla on top, then place the sliced tomatoes, shrimps and the remaining cottage cheese-cheese mixture on top. Cover the pan and allow to bake until all the cheese has melted.
