In response to repeated requests from readers, here’s a dish from Asian cuisine: Tom Kha soup. Healthy and very, very filling!

Tom Kha Soup with Chicken Breast and Mushrooms

Ingredients
 1.50 l Chicken broth (water + 2 cubes of broth)
 800 g Chicken fillet
 400 ml Coconut milk
 200 g Red lentils (or beans)
 179 g Button mushrooms (or shiitake mushrooms)
 150 g Bell pepper (paprika)
 132 g Carrot
 130 g Tomato
 90 g Onion
 30 g Scallions
 20 g Dill
 12 g Garlic
 60 g Yellow curry paste AROY-D
 2 tbsp Lemon juice (or lime)
 1 tsp. Chilli flakes (if you like sharper dishes)
 Santa Maria seasoning: chicken with yellow curry

Chop all the ingredients for the soup.

Place the chicken breast, mushrooms, onion, garlic, carrot, and bell pepper in a pan and sauté until most of the liquid has evaporated.

Meanwhile, bring 1.5 litres of water to a boil and dissolve the chicken broth cubes in it. Add the curry paste, Santa Maria chicken seasoning, chilli flakes, and lemon juice.

Add the contents of the pan and coconut milk to the seasoned broth. Cook for 10 minutes.

Add the lentils. Boil for about 7 minutes. Add the chopped herbs. Remove from the heat, cover, and let it “rest.”
