Ingredients for Sponge Cake
 2 Eggs
 100 g Fresh spinach
 40 g Flour (I use corn flour)
 1 tsp. Baking powder
Ingredients for filling
 250 g Fresh cheese “Ricotta Lago Maggiore” 6%
 200 g Fish (salmon or trout - smoked or steamed)
 30 g Dill
 A pinch of salt, and spices of your choice (I use pepper, garlic, and Mediterranean herbs)

Pour boiling water over the spinach and leave for 5 minutes. Drain.

Separate egg whites from egg yolks

Mix egg yolks with spinach, and mix in flour. Mix everything.

Carefully stir in the beaten egg whites.

Pour the dough onto a baking sheet, flatten to a thickness of ~ 3 mm and bake in the oven at 180 ° C until ready ~ 15-20 minutes. Remove and cool slightly.
