A breakfast rich in iron and protein – spinach omelette with cheese and scallions.

Blend the eggs and egg white with spinach, salt, and pepper. Grate the cheese.
Pour the mixture into a pan ( mine is 26 cm in diameter) and bake at a very low temperature until the bottom is "set."
Mix the grated cheese with the scallions and sprinkle over the omelette, cover the pan with a lid and allow the cheese to melt (~3-4 minutes). Then fold the omelette and leave it in the pan for a few more minutes.
