I haven't had such a delicious omelette for a long time.

Beat the eggs with the spinach, cream cheese, salt and pepper. Grate the cheese.
Cut the pita or tortilla halves into long, thin strips and then cut them into short strips.
Stir the lavash strips into the egg-spinach mixture and pour the mixture into a hot frying pan lightly greased with oil.
Fry at a very low temperature for ~7-8 minutes.
Turn the omelette over using a plate. Sprinkle the grated cheese on top, put the lid on the pan and let the cheese melt (~3-4 minutes). Fold the omelette in half.
