Melt the chocolate. Cut the banana into rounds.
Make galette sandwiches: spread peanut butter on all 8 galettes (~12 g per galette) and place banana rounds on 3 of them.
Place the remaining 3 rice galettes (with peanut butter on the bottom) on top of the galettes with the banana rounds and press gently.
Top the prepared galette sandwiches with melted chocolate. Place in the fridge to set.
