Sweet Potato and Zucchini Waffles with Cheese

Who doesn't love waffles? And this version with sweet potatoes, zucchini, and cheese is simply delicious!

Ingredients
 2 Eggs
 225 g Sweet potato
 345 g Zucchini
 160 g Milk 1.5%
 120 g Flour (I have corn flour)
 60 g Low-fat cheese (I used Bresto light 15%)
 18 g Garlic
 1 tsp. Baking powder
 7 g Oil (for greasing the pan)
 Greens
 Salt, pepper
Directions

Peel the sweet potatoes, cut them into pieces, and steam them (or microwave them for about 8 minutes).

Grate the zucchini, sprinkle with salt, and set aside to drain.

Whisk the eggs with the mashed potatoes. Add the kefir, baking powder, salt, and grated zucchini. Add the flour and mix everything again.

Grease the pan with 1 g of oil and cook over low heat until done.
