Rice noodles with mushrooms and rutabaga in coconut milk sauce - Delicious!

Rice noodles with mushrooms and rutabaga

Ingredients
 100 g Rice noodles
 400 ml Kokosriekstu piens 18%, (vai 12-15% krējums)
 389 g Rutabaga (or any other vegetable)
 250 g Mushrooms (I used champignons)
 150 g Tomatoes Cherry
 90 g Onion
 10 g Garlic
 40 g Greens (dill, parsley)
 15 g Extra virgin olive oil
Directions

Cut the mushrooms, onion, garlic, rutabaga and greens. Cut in half Cherry tomatoes.

Heat the oil in a pan and fry the onion and garlic. Later, add cut mushrooms and rutabaga. Add a little water, spices and stew until almost done.

Boil water in a pot and cook the noodles. Drain and set aside.

Add tomatoes, coconut milk to the mushrooms and rutabaga in the pan and let it boil.

Add the prepared noodles and greens. Let it cook for a few more minutes - Ready!
