Oh my, porridge can really be so delicious!

Wash the rice thoroughly, put it in a saucepan filled with water and bring to the boil over a high heat.
Reduce the heat to a minimum and add the sliced pumpkin. When the pumpkin is almost ready, add the finely chopped tomatoes.
Cook until ready stirring occasionally (adjust the amount of water to the desired consistency).
When ready, top the porridge with grated cheese and herbs.
