Bean soup is a favourite in our house. This time with smoked pork ribs.

Bean soup with smoked pork ribs

Ingredients
 25 l Water (top up as required)
 552 g Smoked pork ribs (minus 174 g bone weight)
 350 g Brown beans (dry weight)
 250 g Celery root (or rutabaga)
 170 g "Latgale" cream cheese with herbs
 117 g Carrot
 60 g Onion
 20 g Garlic
 30 g Greens (parsley, dill, coriander)
 Spices of your choice
Directions

Place the beans and ribs in a pot. Cook the ribs until the meat comes off the bone easily. Remove the bones and cut the meat finely.

Cut the celery root and onion while the beans cook, grate the carrot, and chop the garlic. Add the vegetables when the beans are almost ready.

A little later, add the meat, the cream cheese and the spices. Bring to the boil and add the herbs.
