Who doesn't like pancakes? Probably very rarely anyone. And these are delicious!

Thin Pumpkin Pancakes with Peanut Butter

Ingredients
 3 Small eggs
 200 g Fresh pumpkin
 200 g Milk 2%
 170 g Flour (1:1 whole wheat flour and premium wheat flour)
 100 g Hot water
 30 g Peanut butter
 7 g Oil (for greasing the pan)
 A pinch of salt
 Cinnamon
 Sweetener of your choice

Cut the pumpkin into pieces, steam and blend in a blender (I put it in the microwave for 5 minutes).

Beat/blend the eggs with the pumpkin puree, milk, water, peanut butter, salt, cinnamon, and sweetener.

Add the flour and mix everything again.

Finally, add the hot water and mix everything.

Grease the pan with oil and fry the pancakes on both sides at a low temperature.
