Stuffed Chicken Breast with Mushrooms and Cheese

Ingredients
 1500 g Three large chicken breast fillets
 250 g Mushrooms (I used champignons)
 170 g Carrot
 84 g Onion
 25 g Garlic
 100 g Cheese 10%
 50 g Dor Blue cheese (or other fatty, well-melting cheese)
 5 g Oil

Grate the carrots, chop the mushrooms and onions, crush the garlic and fry/sauté them in a heated pan with oil (5 g).

Cut or grate the cheese. Set aside 50g of low-fat cheese. Mix the remaining cheese with the cooled vegetables.

Make pockets in the chicken breast fillets and fill them with a mixture of vegetables and fatty cheese.

Place in a baking tin, cover with foil and bake in an oven preheated to 180 °C for ~30-35 minutes.

Remove the foil before the end of the baking time and continue baking for an additional 7 minutes. Then, sprinkle the set-aside cheese on top. Put it back in the oven, turn it off and allow the cheese to melt.
