Crispy and spicy.

Wash, peel and grate the beetroot into long, thin straws.
Place the beetroot in a deep bowl, add the chopped garlic, pour over the vinegar and mix well. Add the oil and all the other seasonings.
Place the bowl in a hot water bath and steam for ~20-25 minutes.
Mix everything thoroughly and put it under a load for 24 hours.
