The forests are full of chanterelles. It's time for a simple and delicious recipe with them.
Cut washed, cleaned mushrooms, onions, and garlic, and put them in a pan slightly greased with oil. Sauté ~15 min.
Add hot vegetable bouillon (dissolve the bouillon cubes in 500 g of water), pearl barley rinsed in cold water, and frozen vegetables. Sauté for another ~10-12 min. Add water as needed.
Add wine, spices, tomatoes, and coconut milk. Mix everything and let it simmer on low heat for another ~10-15 min.
Add spinach and greens at the very end.
Water is added as needed - depending on how thick/liquid you want this dish to be in the end.
