A healthy and delicious pancake without flour, rich in protein.

Blend the egg, egg white, curd, a pinch of salt and 30 g of soy protein (sweetener of your choice) in a bowl. Set aside for 10 minutes to rest.
Heat the pan and pour the batter into it. Smooth it out, cover the pan with a lid, and cook over low heat for about 4-5 minutes on one side. Flip it over and cook for about 1-2 minutes on the other side.
Cut the peaches into small pieces, place them in a saucepan, add sweetener, 100 g of water and cook over low heat until soft.
Mix the cornstarch with 50 g of water and add it to the soft peaches. Stir while heating until the mixture thickens. Remove from the heat and allow to cool.
