A simple and delicious breakfast.

Beat the eggs, add the salt, spices and scallions and pour into a hot frying pan lightly greased with oil.
Place a tortilla on top and press down lightly. Cover the pan with a lid and allow the omelette to fry over a low heat.
Turn the omelette over, top it with the grated cheese, put the lid on the pan and let the tortilla cook a little from underneath. Then fold over and enjoy a delicious breakfast.
