The omelette is so soft and fluffy when cooked this way!

Pour the water into a deep pan or saucepan with a thick bottom and bring to the boil.
In a bowl, lightly whisk the eggs with the milk, add salt, spices and cheese.
Transfer the mixture into a heatproof bowl and place in the heated water. Put the lid on and cook the omelette over a moderate flame for ~15 minutes.
