Omelettes never get tired. All the more so if they can be so diverse.

Beat the eggs with the egg whites, add chopped greens, salt, and spices (optional), then pour the mixture into a pan and fry the omelette.
When the bottom is slightly browned, place chopped shrimp and tomatoes on top of the omelette, sprinkle with grated cheese, fold over, and press down.

Remove from the heat, replace the lid and allow the cheese to melt.
