Beat eggs with egg white and yogurt. I didn't put any salt or pepper, because the cheese is quite salty and spicy.
Pour the mass into a pan lightly greased with oil and fry at low temperature in a pan under the lid until the bottom is ready (slightly browned edges).
Put pear slices on one side of the omelette and sprinkle with blue cheese.
Fold the omelette, press it, put the lid on the pan and remove from the heat - allowing the cheese to melt.
