Those on a meat-free diet will love this delicious, filling, protein-rich omelette.

Divide the cauliflower and broccoli into small rosettes. Put them in boiling water and scald them lightly. Drain and place the vegetables in a baking tin.
Whisk the eggs with the egg white, salt and spices in a bowl. Add the sliced scallions, squeezed garlic and grated cheese. Mix everything and pour over the vegetables.
Bake in a preheated oven at 180 °C for ~30-35 minutes.
