First, prepare the cherries: put the cherries and sweetener in a saucepan and boil.
Mix the cornstarch with water and add to the cherries. Heat while stirring until the mass begins to thicken. Boil for 1-2 minutes. Remove and cool.
Prepare the cream: add sweet cream, sweetener, and vanilla to the culinary curd and beat everything into a stiff cream. Then add the Ricotta cheese and mix everything with a pastry spatula (do not blend Ricotta)!
Dip the Savoyardi biscuits in coffee and place them in a mould.
Put half the cherries on the biscuits and top them with half the cream. Place a second layer of soaked cookies on top, and cover them with the remaining cherries and cream.
Put in the fridge for several hours.
