I had a piece of pumpkin and some cheese. I baked them into delicious muffins.

Preheat the oven to ~175 °C.
Grate the pumpkin on a fine grater.
Add the eggs, finely chopped sun-dried tomatoes and the remaining ingredients and mix well.
Place the batter in the muffin tins.
Place in the oven and bake for ~40 minutes.
