As a result of the experiment, delicious, filling cookies were made for me from the remaining pumpkin puree.

Pumpkin cookies with ginger and seeds

Ingredients
 1 Egg
 230 g Pumpkin puree (baked and sautéed pumpkin)
 100 g Whole wheat flour
 100 g Corn flour
 20 g Grated fresh ginger
 25 g Seed mix
 1 tsp. Gingerbread seasoning
 1 tsp. Baking powder
 Sweetener of your choice
Directions

Add all the ingredients to the pumpkin puree.

By hand form small balls, put on a plate.

Press the "cross" on the surface with a fork.

Sprinkle the seeds on top.

Put in the oven for ~ 20 minutes at 180 degrees.
