Ingredients
 1 Egg
 100 g Egg white
 250 g Pumpkin (fresh)
 250 g Skimmed milk kefir
 200 g Cumin cheese (or other lean cheese)
 140 g Flour (I use corn flour)
 100 g Skimmed milk curd
 15 g Garlic
 15 g Scallions
 6 g Extra virgin olive oil
 1 Small chilli pepper
 ½ tsp. Baking powder
 A pinch of salt

Whisk egg white with cottage cheese and kefir. Grate the pumpkin on a fine grater.

Add grated cheese, squeezed garlic, chopped chilli, scallions and flour. Mix everything.

Place the batter by the heaped spoonful in a preheated waffle pan greased with oil. Bake the waffles (or bake them in a regular pan under a lid at a very low temperature).
