Ingredients
 3 Small eggs
 350 g Zucchini
 250 g Mushrooms (for me champignons)
 160 g Flour (I use corn flour)
 150 g Skimmed milk kefir
 40 g Dor blue cheese (or other cheese with a strong flavour, up to ~340 kcal/100 g)
 40 g Sun-dried tomatoes
 40 g Scallions
 15 g Garlic
 10 g Dill
 1 tsp. Baking powder
 Salt, pepper

Beat the eggs with kefir. Grate the zucchini, leave for a while and squeeze out the excess liquid.

Cut the mushrooms and sauté in a pan. Drain the sun-dried tomatoes of excess oil and cut them. Chop the dill and the scallions. Mix everything.

Add the flour and baking powder to the mixture.

Place the batter in a waffle pan and bake the waffles.
Or fry like pancakes in a regular frying pan under a lid, at a very low temperature.
