Flavourful, filling and delicious, these cheese muffins are perfect for breakfast and as a snack.

Grate the zucchini, add a little salt and set aside to drain.
Beat the eggs with the egg white.
Grate the cheese.
Add to the egg mixture the zucchini, squeezed of excess liquid, the grated cheese and the finely cut sundried tomatoes.
Add flour and spices of your choice and fill the mixture in 6 muffin tins or bake as one whole pie. Sprinkle sesame seeds over the top.
Put in the oven at 175-180 °C and bake for ~25-30 minutes.
