Ingredients (pan diameter 20 cm)
 2 Eggs
 150 g Egg white
 150 g Flour (I use corn flour)
 100 g “Bresto Light” cheese (or any other low-fat cheese ~10%)
 266 g Zucchini
 88 g Carrot
 87 g Onion
 15 g Garlic
 4 g Oil (for frying)
 1 tsp. Baking powder
 Salt, pepper
Directions

Grate the cheese, zucchini, and carrot. Chop the onion and crush the garlic.

Add the eggs, egg whites, flour, salt, pepper, spices, and baking powder.

Place 1/4 of the batter in a pan lightly greased with oil, spread it out, and cook over very low heat, covered, on both sides.

Repeat the same process with the remaining three portions of dough.
