Healthy, delicious zucchini crepes (even those on a slimming diet can eat them -:)).

Ingredients (pan diameter 20 cm)
 2 Eggs
 300 ml Milk 2%
 230 g Courgette
 100 g Corn flour (or wholemeal wheat flour)
 5 g Psilliums (ja izmanto kviešu miltus, psilliumu nevajag)
 5 g Oil (for greasing the pan)
 Vanilla
 A pinch of salt
 Sweetener
Directions

Place the eggs, cut courgette (zucchini), milk, sweetener and a pinch of salt in a bowl and blend with a blender until smooth.

Add the flour and psyllium and blend again.

Heat a frying pan, lightly grease it with oil and fry the crepes on both sides over medium heat.
