Zucchini pizza with mushrooms and chicken

I bought a lot of salted smoked chicken, which had to be “utilized. Along with a bunch of vegetables, the salt just neutralized and managed a fantastic, delicious, hearty pizza with mushrooms and smoked chicken.

Zucchini pizza with mushrooms and chicken

Ingredients for the base
 2 Eggs
 600 g Zucchini
 150 g Skimmed milk curd
 80 g Flour (I had corn)
 15 g Garlic
 Spices of your choice (don't forget to add salt to the zucchini!)
Ingredients for top
 50 g Pūre jika
 400 g Smoked chicken or smoked chicken breast would of course be better (chicken, of course, without skin and fat)
 340 g Mushrooms (mushrooms or chanterelles)
 160 g Bell pepper (paprica)
 60 g Leek
 40 g Dill, parsley
 15 g Garlic
 120 g Cheese Strongman (or other 10% cheese)
 200 g Natural yogurt
 50 g Blue cheese (or other fatty, high-melting cheese)

Grate the zucchini, add a little salt and set aside to melt. After min 15 of them squeeze the excess juice.

Whisk cottage cheese with eggs.

Zucchini is added to the egg - curd mass. Add spices, garlic, flour.

The mixed mass is applied to the baking tray to form a round shape of the base ~ 1 cm thick (30-32 cm).

Put in the oven and bake for the first 10 minutes at 200 degrees (so that the zucchini liquid does not break out), then reduce to 180 degrees and bake for ~ 15 minutes (semi-finished).

Meanwhile, cut the mushrooms, fry in a pan lightly smeared with oil, add peppers, leeks, garlic. if necessary add a little water. Set aside to cool. If necessary, pour off excess liquid.

Grate the "Strongman" cheese and add it to the cooled vegetables. Stir in yogurt, spices.

Remove the almost finished base, smear with adjika and cover the dried vegetable - cheese mass. Put in the oven at 180 degrees for ~ 15 minutes.

Remove the sprinkled blue mold cheese and put it back in the oven for ~ 5-7 minutes.
