A very healthy, protein-rich (almost carbohydrate-free) and delicious roulade made from simple everyday ingredients.

Grate the zucchini, sprinkle with salt, mix and set aside to drain. Grate the cheese and carrots.
Break 3 eggs into a bowl. Add grated cheese, carrots, zucchini (squeeze out excess liquid) and spices.
Place the mixture on a baking tray (25×26 cm) and spread it out in a thin layer. Place in an oven preheated to 175-180 °C and bake for ~30-40 minutes.
Remove the "biscuit" from the baking paper, cool, spread with adjika, place lettuce leaves and shrimp on top, roll up and enjoy a delicious and healthy meal.
