Carrot and dried fruit fruitcake

With healthy wholemeal flour, no sugar, no fat! Here's a delightful and delicious carrot-dried fruit fruitcake.

Ingredients
 6 Eggs
 360 g Dried fruit and berries (I have 60 g each: apricots, dried cranberries, plums, raisins)
 300 g Carrots
 300 g Kefir 2%
 300 g Whole wheat flour
 100 g Nuts (walnuts for me)
 50 g Orange juice
 1 ½ tsp. Soda
 Ginger, gingerbread seasoning

Kefir is punished and left to act.

Grate the carrot on a fine grater.

Add the eggs, flour and spices to the carrots.

 If necessary, cut in the dried fruit and berries.

Add the cut fruit and berries to the batter.

Place the dough in the tin and bake in the oven at ~160-170 °C for ~50 to 90 minutes (depending on the diameter and depth of the tin. I had a tin of 18-20 cm diameter and quite deep, so it took almost 2 hours to bake. I recommend covering the top with foil to prevent it from burning).

10 minutes before finishing baking, remove from the oven and drizzle with orange juice.
