Carrot and banana muffins. Simple, fragrant and delicious. No sugar or added sweeteners.

Carrot Muffins with Banana

Ingredients
 1 Egg
 120 g Carrot
 100 g Banana
 40 g Flour (I use whole wheat flour)
 20 g Soy protein with vanilla flavour
 20 g Oil
 5 g Baking powder
 1 tsp. Cinnamon
 ½ tsp. Cardamom

Blend the carrot, egg and oil in a food processor until smooth (or grate the carrot using a fine grater). Add the banana, mashed with a fork.

Add the flour, baking powder, and cinnamon. Mix everything thoroughly.

Pour the batter into silicone moulds (or one large baking tin) and bake in an oven preheated to 175 °C for about 25–30 minutes.
