Real fitness syrniki – no flour or semolina! With chia seeds and soy protein! Healthy, delicious and nutritious.

Ingredients
 1 Egg
 400 g Skimmed milk curd (dry, grainy curd required, not packaged curd)
 75 g Ripe apricots
 30 g Chia seeds
 20 g Soy protein
 20 g Rice flour for coating
 3 g Oil
 Vanillin
 Sweetener of your choice

Beat the cottage cheese and eggs into a smooth mixture.

Add the chia seeds, protein powder and sweetener, and knead the dough. Place the dough in the fridge and leave it for at least 30 minutes (I knead the dough the night before and bake it the next day, allowing the chia seeds to swell properly).

Divide the dough into 5 equal parts (~507 g each) and roll into round balls.

Form small patties with your hands, placing a piece of apricot in the middle. Seal tightly and roll in rice flour. Repeat with the remaining 4 balls.

Place on a slightly heated pan (I set the heat to 5 out of 9) and fry under a lid for about 8 minutes on one side and about 4 minutes on the other.
