Curd Pie with Raspberries (with pea protein)

Another delicious curd cake with raspberries. It's simply delicious! And pay attention to its excellent nutritional value!

Ingredients for the base (mould diameter 28 cm)
 3 Small eggs
 200 g Skimmed milk kefir
 100 g Oat flakes
 35 g Pea protein with vanilla flavour
 1 tsp. Baking powder
 Sweetener of your choice
Ingredients for the topping
 2 Small eggs
 150 g Egg white
 300 g Fresh raspberries
 400 g Natural yoghurt "Skyr"
 250 g Skimmed milk curd
 35 g Corn starch
 25 g Pea protein (or corn starch)
 8 g Vanilla sugar
 Sweetener of your choice

Add egg, kefir, protein powder, and sweetener to the oat flakes and leave aside to swell for ~20 minutes.

Place all the topping ingredients (except the raspberries) in a bowl and blend with a blender.

Pour the oat flake mixture into the mould and smooth it out. Bake in the oven at 180 °C for ~15 minutes (to slightly brown the top).

Remove the base from the oven, top with raspberries and pour over the blended curd mixture. Smooth the surface.

Return to the oven and bake at ~170-175 °C for ~40-45 minutes, until the top is lightly browned.
