I like pancakes not only on holidays. And together with apples and cinnamon - fantastically delicious!

Peel the apple and cut it into small pieces (or grate).
Add cinnamon and optional sweetener and microwave for 5 minutes. Remove, mash it with a fork and cool.
Blend the batter ingredients.
Pour the batter into the pan and bake the pancake at a very low temperature on both sides.
Put the apples in the middle of the pancake, fold it over and enjoy.
p.s. I splashed a pancake with 10 g of salted caramel sauce (https://dietsabc.com/en/recipes/sala-karamele-ar-pienu-un-miltiem/) and sprinkled with 2 g of caramelized walnuts.
