Curd – Yoghurt Dessert with Strawberries

Ingredients
 400 g Berries (strawberries)
 380 g Natural yoghurt “Skyr”
 350 g Culinary curd "Baltais"
 180 g Skimmed milk curd
 25 g Gelatin
 120 g Water
 Vanilla essence/sugar
 Sweetener of your choice
Ingredients for strawberry sauce
 300 g Fresh strawberries
 15 g Corn starch
 250 g Water (depending on how thick/thin you want it)
 Sweetener of your choice

First, pour cold water over the gelatin and leave it to swell.

Finely chop the strawberries.

Put both curds and yoghurt in a bowl. Add sweetener and blend into a smooth mixture.

Add strawberries and dissolved gelatin, stir, pour into a mould, and place in the fridge to set (the curd-yoghurt mixture should be at room temperature!).

Put the chopped strawberries and sweetener in a saucepan and cook. When done, I mashed them with a masher.

Add cornstarch dissolved in water.

Bring to the boil. Leave to cool.
