Beetroot salad is a favourite in our family.

Beetroot salad with herring fillet and apples

Ingredients
 500 g Boiled beets
 200 g Sour apple
 200 g Pickled cucumbers
 145 g Marinated herring fillet "Gardums"
 100 g Boiled carrots
 60 g Onion
Ingredients for Mayonnaise
 2 Boiled eggs
 200 g Skimmed milk curd "Amfora" Varske (or natural yoghurt)
 15 g Mustard
 Salt, pepper
Directions

Boil and peel the carrot and eggs.

Cut the cooked beetroot, carrot, herring, onion, and pickled cucumber into small cubes and place in a bowl. Add the grated apple.

Remove the yolks from the eggs and mash them. Add the skimmed milk curd (or natural yoghurt), mustard, salt, and seasonings of your choice, and whisk everything into the mayonnaise.

Chop the egg white and add to the beetroot.

Mix the salad with the 'mayonnaise' and enjoy a delicious meal!
