I like mushrooms, so I made a delicious and hearty porcini soup! 

Porcini soup with new potatoes

Ingredients
 1.70 l Water
 545 g Mushrooms (or other mushrooms)
 400 g New potatoes (or turnip, or celeriac)
 350 g Cauliflower
 200 g Frozen green peas
 119 g Carrot
 40 g Greens (dill + onions)
 30 g Pearl pearl barley (or any other cereal)
 180 g Processed cheese "Dzintars Baltija" classic
 Salt, pepper, allspice, bay leaves, and other spices of your choice.
Directions

Pour water into the pot, add salt, pepper, bay leaves, spices and boil.

Cut the mushrooms, potatoes and carrot, chop the greens.

Place the mushrooms, potatoes and carrots in a saucepan. Cook until half-cooked, and then add the cauliflower cut into rosettes, green peas and pearl barley. Cook until ready.

At the end, add the melted cheese. Bring to a boil, add herbs.
