Banana-curd muffins

Ingredients
 2 Eggs
 126 g Banana
 120 g Skimmed milk curd
 60 g Whole oat flakes
 40 g Erythritol
 2 g Baking powder
Directions

Add erythritol to the eggs and beat for ~3 minutes until they double in volume.

Blend banana, cottage cheese, oatmeal and baking powder with a blender. Add the beaten eggs and mix.

Place the mass in moulds (6 cupcake moulds or one large mould.)

Place the cupcakes in the oven and bake at ~175 °C for ~30 minutes.
