Of course, sitting in the "home" is more time to pamper yourself with something delicious, maybe unusual. Thus, the usual banana-bran pancakes turned into an extremely delicious and soft cake.
Squeeze the banana and beat with egg.
Add the bran (it can be ground beforehand, but I didn't, leaving it coarse) and baking powder. Mix everything, set aside for ~ 10 minutes to allow the bran to swell.
Bake 3 pancakes in a very low temperature pan under the lid (I used a small metal ring to make sure the pancakes were all the same size).
Add a little warm water to the peanut butter and mix until the sauce is consistent.
Mix yogurt with culinary cottage cheese, vanilla and sweetener.
Make a cake - put the first pancake, a little yogurt-curd cream on top, then cranberry jam and peanut butter sauce on top. On top of the second pancake and repeat all the steps.
I smeared the surface and sides with the same cottage cheese-yoghurt cream.
