One of my favourite breakfast dishes.

Add the oat flakes, buttermilk, a little salt and spices to the egg, mix everything and leave for 15 minutes to allow the oat flakes to swell slightly.
Heat a frying pan and lightly grease it with oil, pour the batter on it and spread it with a spoon. Turn the heat down to low and fry on one side.
Turn over, top with tomatoes mixed with grated cheese and scallions. Cover the pan with a lid and bake for ~3-4 minutes. Fold the pancake in half and enjoy a delicious breakfast.
