Oatmeal Cookies with Dried Fruit and Pears

Ingredients
 1 Large egg (60 g)
 150 g Culinary curd "Baltais"
 80 g Whole oat flakes
 95 g Pear
80 g Dates (I use Medallion dates, which are very soft and do not require soaking)
 50 g Dried apricots
 50 g Dried cranberries
Directions
1

Blend the egg, curd and dates into a smooth mixture (soak the dates first if necessary).

2

Chop the dried apricots and cranberries into smaller pieces. Cut the pears into small cubes.

3

Add the oat flakes and baking powder. Mix everything and set aside for 20-30 minutes to allow the oat flakes to swell.

4

Form cookies with wet hands (I divided the dough into 5 equal parts) and place them on a baking sheet.

5

Bake in a preheated oven at ~175 °C for 30-35 minutes.
