I don't believe in how delicious a cake can be baked simply in the microwave. I had a great morning with a delicious cake for breakfast - ~ 300 Kcal each. Great start to the day!

Quick Carrot Cake (Microwave)

Ingredients for Sponge Cake
 1 Egg
 140 g Carrot
 50 g Oat bran
 50 g Dates (or other dried fruits)
 70 g Kefir or milk 2%
 ½ tsp. Baking powder
 Sweetener (if you ask - I didn't roll, because carrots and date sweets were enough)
Ingredients for Cream
 300 g Skimmed milk curd
 100 g Natural yogurt
 Vanilla, sweetener
Ingredients for Decor
 30 g Walnuts
 15 g Dark chocolate
 20 g Milk (2%)

Dates aplej with hot water and keep for ~ 20-30 minutes.

Grate the carrots on a fine grater.

Add eggs, bran, milk, beaten dates, baking powder, vanilla and blend.

The mass is poured into a mold (I had a 10 cm silicone mold) and put in the microwave for 7-9 minutes (I bake for 9 minutes at max W and also depends on how deep the mold is).

Cool and cut into 3 slices. If a shallower shape, then in half.

Add yogurt, yogurt, vanilla and blend.

The cream is smeared between the discs, on top, along the edges.

Decorate with chopped walnuts on top and along the edges.

Melt the chocolate with milk in a microwave oven and pass over.
