Apple crumb cake

Ingredients for Crumbs (shape diameter 20 cm)
 2 Egg yolk
 300 g Flour (150 g wholemeal wheat, 100 g wholemeal oatmeal)
 100 g Butter
 70 g Brown sugar
 50 g Green buckwheat flour)
 80 g Erythritol
 4 g Baking powder
Ingredients for filling
 640 g Apples (already peeled, without core)
 30 g Maple leaf syrup
 30 g Erythritol
 6 g Cinnamon

Peel the apples, cut into small pieces, put in a pan, add cinnamon, syrup, erythritol and stir-fry soft. Set aside.

In a bowl, add 300 g of flour, sugar, erythritol and baking powder.

Grate the cold butter in flour on a coarse grater.

Add 2 egg yolks (egg whites will remain for one morning's breakfast omelette) and mix everything by hand to form crumbs.

At the bottom of the form, pour 1/2 of the rubble, forming small "sides" along the edges. Slightly compressed.

Place the apples on top and pour the remaining crumbs on top and smooth.

Place in the oven at 180 degrees and bake for ~ 40-45 minutes until the surface is slightly golden.
