With just two ingredients, you can make a truly delicious and healthy treat.

First, prepare the apple purée. You can either bake the apples in the oven or follow my method: peel and cut them into small pieces, then microwave for 5–6 minutes.
Blend the puree in a blender and cool slightly.
Soak and melt the gelatin.
Add the sweetener, vanilla, and melted gelatin, and start whisking. Whisk until the mixture has increased in volume by almost three times and has become white and sticky.
Line a dish with cling film and spread the apple mixture on top. Place in the fridge to set.
