When all the sugar has been added, turn on the mixer to the highest speed and whip until a thick, stiff mass is formed. ~10 minutes.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 5\">\n<div class=\"cooked-dir-content\">\n<p>Place a metal pastry ring on the baking sheet (or draw 26 cm circles by hand) and put the meringue mass in it.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 6\">\n<div class=\"cooked-dir-content\">\n<p>Put the meringue in the oven and immediately reduce the temperature to 90 \u00b0C and bake for ~1.5-2 hours. The meringue should remain white. Then turn off the stove, open the door and let the meringue cool.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 7\">\n<div class=\"cooked-dir-content\">\n<p>Prepare cherry jam.<br \/>\nPut the cherries, sugar (or sweetener), and water in a bowl and mix so that there are no lumps. Add cornstarch, mix everything, and heat, stirring constantly, until the mass boils and becomes thick. Cool it down.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 8\">\n<div class=\"cooked-dir-content\">\n<p>Prepare mango passion fruit jam.<br \/>\nPeel the mango, and cut it into pieces. Cut the passion fruit in half, remove the pulp with a spoon and add to the mango. Add sugar (or sweetener) and stir. Add the cornstarch, mix everything, and heat, stirring constantly, until the mass boils and thickens. Cool it down.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-heading\">Assemble the cake<\/div>\n<div class=\"cooked-single-direction cooked-direction cooked-direction-has-image\" data-step=\"Step 9\">\n<div class=\"cooked-dir-content\">\n<p>Place the first meringue biscuit on the baseplate.
