Add the starch, stirring until the mass thickens. Set aside to cool.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 2\">\n<div class=\"cooked-dir-content\">\n<p>Grind the sugar and erythritol into a powder.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 3\">\n<div class=\"cooked-dir-content\">\n<p>Place 190 g of egg whites in a bowl and add a pinch of salt. Start whisking at a medium speed until the egg whites form a soft foam.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 4\">\n<div class=\"cooked-dir-content\">\n<p>Gradually, the sugar-erythritol mixture begins to be added with a spoon. When the last sugar is added, increase the power of the mixer and beat the egg white until it becomes shiny and flexible. I whipped for ~7 minutes (depends on the power of the mixer). At the end, add\/stir in a teaspoon of lemon juice and cornstarch.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 5\">\n<div class=\"cooked-dir-content\">\n<p>Put the beaten egg whites into a pastry bag fitted with a nozzle and pipe six baskets with raised edges, leaving a base at least 1-1.5 cm thick at the bottom of the basket.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 6\">\n<div class=\"cooked-dir-content\">\n<p>Place in an oven preheated to 130 \u00b0C and bake for ~40 minutes (keep an eye on it, so that the meringue does not burn). Remove and allow to cool completely.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 7\">\n<div class=\"cooked-dir-content\">\n<p>Prepared Ricotta cream \u2013 mix cooking curd with Ricotta, sweetener and lemon juice (or lemon peel). Filled in a pastry bag with a tip.<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 8\">\n<div class=\"cooked-dir-content\">\n<p>Put the cherry filling into the bottom of the meringue baskets, then pipe the cream on top.
