Yes, potatoes are also part of my daily diet, and they really do leave me feeling full for a long time.

Potato Stew with Chicken Breast

Ingredients
 400 g Chicken fillet
 900 g Small "dessert" potatoes
 400 g Green peas and carrots mix (frozen)
 315 g Courgette
 250 g Mushrooms (I used champignons)
 180 g Processed cheese “Baltijas Dzintars”
 100 g Onion
 15 g Garlic
 15 g Oil

First, cut the zucchini, onions, and garlic.

Place the potatoes in a large bowl, drizzle with oil, sprinkle with seasoning, and toss to coat. Place them in an air fryer and cook until done. Alternatively, fry them in a pan or bake them in the oven.

Cut the chicken breast and mushrooms into strips. Place them in an oiled pan, add the onion and garlic, and sauté until the liquid has evaporated. Set aside.

Pour a little water into a pot, bring it to a boil, and add the pea and carrot mixture. Cook for about 15 minutes, then add the zucchini and seasonings, and sauté everything over low heat until done.

Finally, add the pre-prepared meat with mushrooms, the fried potatoes, and the processed cheese, and cook for another 10 minutes or so.

Add greens.
